I believe the disable tab you are referring to only indicates if the vehicle is equipped with a coolant pump. On your platform it is probably meaningless. The minimum/default rpm and coolant temp I believe are the key. However, I have not tested this.

First off don't assume I am an expert at anything other than wasting time
I have never disabled a pump so I do not know the answer to that. I assume you set the min ECT enable temp to 376, Disable RPM to 0 and all the appropriate tables to 0 rpm? That's where I would start if I was attempting to disble the pump.

Not unless you want a CEL. Unfortunately almost anything you unplug generates a CEL these days which can be a good thing (if you accidentally left something unplugged or not plugged in all the way) as well as an annoyance.
